- Chunk pork belly into 4-5 inch chunks, placing into a medium pot with enough water to cover. Boil until opaque. Shut off heat, remove and rinse pork under running water. Clean pot.
- Add pork back to pot along with seasoning ingredients. Bring to a boil then immediately drop heat to a simmer. Leave at simmer for 90-120min. Check for fork tender. Add salt to taste.1h 30mLeave at simmer for 90-120min.
- Take out pork and coursely chop. Add chopped cilantro. Slice open a bun and add meat. Serve.
