  • Combine dashi, mirin, sake, soy sauce, sugar. Mix thoroughly.
  • Add sliced onions to cold pan. Add half of liquid mixture to cover. Add sliced chicken on top of onion. Boil on medium.
  • Drop to medium-low and cover for 5 minutes.

  • Drizzle beaten egg over area. Cover again until nearly set.
  • Serve on top of rice.
  • Add green onions for decoration.
