  • Thinly slice all onions, grate cheese, slice bread into 12 pieces.
  • Melt butter and olive oil on medium-low. Add onions, thyme. Raise to medium, stirring until browning. Drop to medium-low and cover. Stir occasionally until onions heavily caramelize (~40min). Add whisky.

  • Raise heat to high until reduced by half. Add stock and boil. Drop to simmer, partially covered for 20min. Season.
