  • Add flour, yeast, and salt to mixing bowl. Knead while adding water until ball is smooth. Knead 10 more minutes. Proof for an hour at room temperature.

  • Knead for 5 minutes. Divide into 12 balls. Cover to limit drying out.

    Knead for 5 minutes.
  • Roll into long, thin strips. Fold in half lengthwise, then into a spiral. Tuck end underneath and flatten. Roll until 4" disk. Repeat. Rest for 20 minutes (covered).

  • Preheat pan on medium. Cook (covered) for 2 minutes each side.
